Icebox Cake

Desserts are one of my favorite things, especially if they involve chocolate! I love baking but love easy "no bake" recipes. I have a few that I like to use, but I needed a new one. I was reading this blog, and luckily she had a new recipe for me, an Icebox Cake. I decided to try it out this weekend. the recipe is super easy and more importantly....YUMMY!

All you need are Nabisco famous Chocolate Wafers, and whipped cream. I decided to make my own whipped cream, so I need a few more things (heavy whipping cream, sugar, & vanilla). Apparently the chocolate wafers are hard to find, or tricky to find depending on your grocery store. They should be located in the cookie aisle, but I guess they can be found in the ice cream section, with the cones and other condiments.

To make the whipped cream, pour two cups of cream in a bowl. Add 2-3 tablespoons of sugar and a teaspoon of vanilla. Then whip together.


Once the whipped cream is ready, spread some in between each wafer. I must tell you, the wafers are smaller than I had expected. You can make one long log cake, two shorter log cakes, or double the logs together (the option I chose).



Spread whipped cream over the entire cake....

And voila! Your ice box cake. Now you have to wait a few hours before you enjoy. Place the cake in your fridge. The longer you leave it in there, the more time the wafers have to soak up the whipped cream. Traditionally, icebox cakes have chocolate shavings on top. I didn't have any, so I thought I would top it with red sprinkles and chocolate chips for Valentine's Day.

When the cake is ready to serve, cut at an angle and Enjoy!

How I wish katherine liked whipped cream....looks yummy.
