Ohio

Since we had a long weekend, we decided to pack up and head to Ohio to visit my aunt, uncle, cousins, and Grammy. We got in Friday night, then Saturday we headed to visit Grammy. She was so excited to see Landon. It's been almost a year since we last visited her, so the trip was well overdue.
After visiting Grammy, we headed back to my aunt's house, the she and my cousin Moe watched Landon so Andrew and I could have dinner for Valentine's Day. Thanks Lisa and Moe! Sunday was pretty lazy and we hung out at the house. We went to dinner at the Winking Lizard, a favorite of ours when we head to Hudson.
All in all, it was a nice, relaxing visit. Can you believe this is the only picture I took while there??? I brought out the camera plenty of times but never used it. Oh well, I'm sure we'll be back again (hopefully before summertime). Thanks for the hospitality Sinkos!!

Forbidden Yard

I think most people, either growing up or now with their kids, have yard in the neighborhood that is OFF LIMITS! Ours is next door and Landon just so happens to love to go in their yard. Keep in mind, our yards aren't that big, but our next door neighbors have it filled with all sorts of plants and statues (you can see one in the picture). I think I counted 7 total...and what kid wouldn't want to touch and play in that yard.

We get along with our entire stretch of 7 townhouses, except the next door neighbors. Apparently she is quite particular about her yard and Andrew made a few mistakes when we first moved in (nothing serious...complete accidents, and nothing most people would freak out about). I have been dreading the day when Landon can really get around outside because I feared he would love to go in "that" yard. My fear has come true. He will walk all the way to their front door to touch and play with her statues. He also loves to hit the bushes and climb on her stone bench, which is a perfect size for a toddler.

Today was such a beautiful day, we couldn't resist playing outside. I had to get a picture of Landon "attempting" to play with the bushes when daddy stopped him...for just a short minute. I snapped the picture just as Andrew was telling Landon, "no" and Landon looked at Andrew with that look "yeah right!"

This could be an interesting spring and summer with Landon out in the yard playing!

Icebox Cake

Desserts are one of my favorite things, especially if they involve chocolate! I love baking but love easy "no bake" recipes. I have a few that I like to use, but I needed a new one. I was reading this blog, and luckily she had a new recipe for me, an Icebox Cake. I decided to try it out this weekend. the recipe is super easy and more importantly....YUMMY!

All you need are Nabisco famous Chocolate Wafers, and whipped cream. I decided to make my own whipped cream, so I need a few more things (heavy whipping cream, sugar, & vanilla). Apparently the chocolate wafers are hard to find, or tricky to find depending on your grocery store. They should be located in the cookie aisle, but I guess they can be found in the ice cream section, with the cones and other condiments.

To make the whipped cream, pour two cups of cream in a bowl. Add 2-3 tablespoons of sugar and a teaspoon of vanilla. Then whip together.


Once the whipped cream is ready, spread some in between each wafer. I must tell you, the wafers are smaller than I had expected. You can make one long log cake, two shorter log cakes, or double the logs together (the option I chose).



Spread whipped cream over the entire cake....

And voila! Your ice box cake. Now you have to wait a few hours before you enjoy. Place the cake in your fridge. The longer you leave it in there, the more time the wafers have to soak up the whipped cream. Traditionally, icebox cakes have chocolate shavings on top. I didn't have any, so I thought I would top it with red sprinkles and chocolate chips for Valentine's Day.

When the cake is ready to serve, cut at an angle and Enjoy!
